Freezer Co-op

So to make my life a little easier with a busy schedule with a 2nd grader, a kindergartner, a preschooler & a baby, I decided in October to join a freezer meal group. There are 12 of us in the group. Once a month we make up 12 freezer meals & then swap them for 11 different ones. For November I decided I was going to blog it...Here it is. I made beef stew!!

This is the time I started. I was thinking I was going to be up ALL night because I started so late but the kids didn't have school the next day, Jer was at a wrestling tourney & mom was in Ireland so I had nothing better to do. Here is my pot with all the ingredients, except corn & peas, waiting to be stirred & boiled.
As I was filling the bags one slipped and poured itself all over the floor, adding to my cleanup list! I was NOT happy!!

A picture of my foot & leg that got splattered by the spill above!

The finished bags halfway through the process. I did 2 batches of triple ingredients in a huge pan. From here I put them in the freezer.

The end time! Just under 3 hours for 12 meals & a spill...not bad! Totally worth it!!

That's awesome!!! How does your coop deal with people who are picky...like I HATE onions! How does that figure in? That is a really cool idea!!

That looks yummy! I LOVE my freezer group! Usually 1/2 the meals are great, the rest are good-ok. Which is about how I cook. I made stuffed green peppers this month (I just cut the peppers in 1/2 and then put the meat mixture in raw!), and I already made pesto for next month. Whoo hooo!! (The pesto was easy- I just had to use the food processor 12 different times, and I am giving them a box of pasta.)
